Dippekuchen (grated potatoes, onions and meat)
Ingredients Dippekuchen (Recipe for 4 servings)
2 kilo potatoes
2 onions
300 g lean streaky bacon (Jerky)
4 eggs
Salt
Pepper
Nutmeg
Ingredients apple sauce
500 g apples
Cinnamon stick
Lemon
Vanilla sugar
Maple syrup
Preparation
Level of difficulty: easy but impressive
Peel and grate the potatoes. Working in small batches, wrap potatoes in a kitchen towel, then twist and squeeze to remove as much liquid as possible. Transfer to a bowl. Stir eggs into the bowl. Medium cube the bacon, render it down in a pan and put it afterwards into the potato dough. Cube the onions and put them as well in the dough. Season with salt, freshly ground pepper and nutmeg and mix all once again. Be careful with the extra salt as beacon releases its salty taste.
If the dough is too watery add some flour. Grease a baking pan with oil and warm it up on the cooker. Spread the whole mixture in the baking pan and sauté it for 5 minutes. Thereafter cover and put it in the preheated oven (200°C). After one hour reduce the heat to 180°C and have it baked another hour.
Now let's make the apple sauce. Cut apples in small pieces. Put the apple pieces with a bit lemon juice and the cinnamon stick into a big pot. Fill in water until the apples are almost covered - rather less water in the beginning as it is easier to add water than to make a too watery sauce thick again J Cook the apple at medium heat till done. Stir regularly and be careful with hot splashes. As soon as the apples are purée sweeten with maple syrup or vanilla sugar.
After two hours you will get a delicious Dippekuchen out of the oven on your table - outside crispy, inside deliciously juicy, nice and hot. Together with the apple sauce - a true culinary delight.
